French Onion Soup is really all about timing. That is, for my dinner party Sat. I buy bones Tuesday (butcher not open Monday); brown on gas barbecue, simmer to make stock overnight, then strain in time to make one of Ottawa's infrequent garbage pickups ... Well, you know ... Then it's easy to caramelize ... hey ... I'm getting ahead of myself!!!
